La riduzione della produzione di latte non \u00e8 dovuta solo a una riduzione dell&#8217;assunzione di sostanza secca indotta da un aumento della temperatura corporea, ma anche ad un&#8217;alterazione del profilo endocrino e del metabolismo energetico (Baumgard e Rhoads, 2007), e ad altri fattori che sono ancora sconosciuti (Collier et al., 2008).<\/p>\n<p>\u00c8 stato dimostrato che, nelle vacche in lattazione, maggiore \u00e8 la produzione di latte all&#8217;inizio dell&#8217;ondata di caldo, maggiore \u00e8 la riduzione dell&#8217;assunzione di sostanza secca. L&#8217;accelerazione nel declino dell&#8217;assunzione di sostanza secca negli animali ad alta produzione \u00e8 dovuta alla necessit\u00e0 di diminuire rapidamente la produzione di calore per contrastare il sovraccarico termico. Ci\u00f2 significa che le vacche da latte pi\u00f9 produttive nella mandria, le vacche fresche, avranno maggiori probabilit\u00e0 di avere un calo dell&#8217;assunzione di mangime, aumentando il rischio potenziale per la successiva lattazione anche nei mesi invernali (Collier et al., 2019). Inoltre, lo stress da calore induce un aumento dei requisiti di mantenimento metabolico compreso tra il 7% e il 25% (NRC 2001).<\/p>\n<p>Per contrastare lo stress da calore, i bovini implementano strategie fisiologiche che consentono loro di produrre meno calore e aumentare la sua dissipazione (De Rensis e Scaramuzzi, 2003; West, 2003; Schutz et al., 2008).<\/p>\n<p>Le strategie comunemente rilevate comprendono:<\/p>\n<\/div><div class=\"fusion-clearfix\"><\/div><\/div><\/div><\/div><\/div><div class=\"fusion-fullwidth fullwidth-box fusion-builder-row-2 nonhundred-percent-fullwidth non-hundred-percent-height-scrolling\" punti del THI al di sopra della soglia di stress (Mathew Haan, Penn State Extension, 2016).<\/p><\/div>\n<p>Da un punto di vista comportamentale, le strategie messe in atto dal bestiame sono:<\/p>\n<ul>\n<li>una riduzione del periodo di riposo e di conseguenza una minore ruminazione (Fig.1)<\/li>\n<li>un aumento dell&#8217;assunzione di acqua<\/li>\n<li>una riduzione della frequenza di assunzione del mangime, con alimentazione concentrata nelle ore pi\u00f9 fresche<\/li>\n<li>ridotta assunzione di sostanza secca ad ogni pasto<\/li>\n<\/ul>\n<\/div><div class=\"fusion-sep-clear\"><\/div><div class=\"fusion-separator fusion-full-width-sep\" style=\"margin-left: auto;margin-right: auto;margin-top:20px;margin-bottom:20px;width:100%;\"><\/div><div class=\"fusion-sep-clear\"><\/div><div class=\"fusion-text fusion-text-3\"><p>Queste risposte fisiologiche e comportamentali aumentano i rischi di acidosi ruminale:<\/p>\n<\/div><div class=\"fusion-clearfix\"><\/div><\/div><\/div><\/div><\/div><div class=\"fusion-fullwidth fullwidth-box fusion-builder-row-4 nonhundred-percent-fullwidth non-hundred-percent-height-scrolling\" assorbimento di acidi grassi volatili<\/p>\n<\/div><\/li><li class=\"fusion-li-item\" style=\"\"><span class=\"icon-wrapper circle-no\"><i class=\"fusion-li-icon fa-check fas\" aria-hidden=\"true\"><\/i><\/span><div class=\"fusion-li-item-content\">\n<p>Maggiore selezione dei mangimi, con preferenza per il concentrato (a causa di un aumento del fabbisogno metabolico)<\/p>\n<\/div><\/li><li class=\"fusion-li-item\" style=\"\"><span class=\"icon-wrapper circle-no\"><i class=\"fusion-li-icon fa-check fas\" aria-hidden=\"true\"><\/i><\/span><div class=\"fusion-li-item-content\">\n<p>Minore effetto tampone della saliva (riduzione del contenuto di bicarbonato per effetto dell&#8217;iperventilazione e della conseguente alcalosi metabolica)<\/p>\n<\/div><\/li><li class=\"fusion-li-item\" style=\"\"><span class=\"icon-wrapper circle-no\"><i class=\"fusion-li-icon fa-check fas\" aria-hidden=\"true\"><\/i><\/span><div class=\"fusion-li-item-content\">\n<p>Riduzione dei batteri cellulolitici e aumento dei batteri del genere Streptococcus che producono acido lattico nel rumine (Tajima et al., 2007; Uyeno et al., 2010).<\/p>\n<\/div><\/li><\/ul><div class=\"fusion-clearfix\"><\/div><\/div><\/div><\/div><\/div><div class=\"fusion-fullwidth fullwidth-box fusion-builder-row-5 nonhundred-percent-fullwidth non-hundred-percent-height-scrolling\" style=\"--awb-border-radius-top-left:0px;--awb-border-radius-top-right:0px;--awb-border-radius-bottom-right:0px;--awb-border-radius-bottom-left:0px;--awb-background-color:rgba(189,193,176,0);--awb-flex-wrap:wrap;\" ><div class=\"fusion-builder-row fusion-row\"><div class=\"fusion-layout-column fusion_builder_column fusion-builder-column-4 fusion_builder_column_1_1 1_1 fusion-one-full fusion-column-first fusion-full-width-sep\" style=\"margin-left: auto;margin-right: auto;margin-top:20px;margin-bottom:20px;width:100%;\"><\/div><div class=\"fusion-sep-clear\"><\/div><div class=\"fusion-text fusion-text-4\"><p>Infatti, \u00e8 stato dimostrato che il <strong>pH ruminale<\/strong> delle <strong>vacche stressate dal calore<\/strong> rispetto alle vacche termo-neutre \u00e8 inferiore sia prima (9,5% inferiore; P &lt;0,01) che dopo (6% inferiore; P &lt;0,05) l&#8217;alimentazione principale (Gao et al.2016).<\/p>\n<p>Inoltre, \u00e8 stato dimostrato (Wheelock 2009) che <em>il 50% della riduzione della produzione di latte \u00e8 dovuto al calo dell&#8217;ingestione di mangime<\/em>. Infatti, durante lo stress da caldo, si ha un&#8217;alterazione del metabolismo energetico con aumento dell&#8217;utilizzo del glucosio da parte delle cellule. Di conseguenza, la disponibilit\u00e0 di glucosio per la sintesi del lattosio, necessario per la produzione di latte, \u00e8 inferiore. Pertanto \u00e8 importante ottimizzare la fermentazione ruminale per garantire un adeguato flusso di amminoacidi e acido propionico nel sangue. Uso costante del lievito vivo per una fattoria di successo<\/p><\/div>\n<p>Il ridotto apporto di fibre, oltre all&#8217;aumento del rischio di acidosi ruminale, provoca inevitabilmente la depressione del contenuto di grassi del latte. \u00c8 stato dimostrato che il lievito vivo <strong>Biosprint\u00ae<\/strong> (MUCL\u2122 39885) \u00e8 in grado di ridurre il rischio di acidosi e di supportare la produzione e la qualit\u00e0 del latte.<\/p>\n<p>In un test eseguito in un <em>caseificio turco con 880 mucche<\/em> frisone in condizioni di intenso stress termico, il lievito vivo Biosprint\u00ae (MUCL \u2122 39885), somministrato durante il periodo estivo, ha migliorato il contenuto di grassi nel latte, mantenendo gli stessi livelli di produzione (grafico 1).<\/p>\n<p>I benefici che si ottengono utilizzando il lievito vivo rimangono costanti e si consolidano se il lievito viene utilizzato regolarmente e continuamente, per tutto il periodo estivo.<\/p>\n<p>Solo in questo modo si possono prevenire gli effetti negativi \u201cduraturi\u201d dello stress da caldo. Se si analizza la performance media degli allevamenti, ogni anno tra luglio e agosto si registra un calo di quantit\u00e0 e qualit\u00e0 del latte prodotto (grafico 2). Le vacche che partoriscono nei periodi di maggior stress termico tenderanno a subire un aumento dei disturbi metabolici tipici del periodo post-parto e raggiungeranno valori di picco di produzione inferiori. Inoltre, ingerendo meno sostanza secca, saranno maggiormente soggette ad una perdita di peso, con impatto negativo sulla fertilit\u00e0. Effetti negativi si vedranno anche sulle vacche nel periodo di siccit\u00e0 che, avendo trascorso la parte finale della gravidanza sotto gli effetti dello stress da caldo, mostreranno ripercussioni negative sulla crescita delle cellule mammarie, con una conseguente riduzione della produzione di latte durante la lattazione imminente e un ritardo nella crescita fetale con evidenti limitazioni al potenziale genetico e produttivo (S. Thao e GE Dahl 2013).<\/p>\n<div id=\"attachment_6883\" style=\"width: 524px\" class=\"wp-caption alignright\"><a href=\"http:\/\/www.prosol.it\/wp-content\/uploads\/2020\/06\/primiparus-cows.jpg\"><img decoding=\"async\" aria-describedby=\"caption-attachment-6883\" class=\"wp-image-6883 \" src=\"http:\/\/www.prosol.it\/wp-content\/uploads\/2020\/06\/primiparus-cows.jpg\" alt=\"\" width=\"514\" height=\"415\" srcset=\"https:\/\/www.prosol.it\/wp-content\/uploads\/2020\/06\/primiparus-cows-177x142.jpg 177w, https:\/\/www.prosol.it\/wp-content\/uploads\/2020\/06\/primiparus-cows-200x161.jpg 200w, https:\/\/www.prosol.it\/wp-content\/uploads\/2020\/06\/primiparus-cows-300x242.jpg 300w, https:\/\/www.prosol.it\/wp-content\/uploads\/2020\/06\/primiparus-cows-400x323.jpg 400w, https:\/\/www.prosol.it\/wp-content\/uploads\/2020\/06\/primiparus-cows-600x484.jpg 600w, https:\/\/www.prosol.it\/wp-content\/uploads\/2020\/06\/primiparus-cows-768x620.jpg 768w, https:\/\/www.prosol.it\/wp-content\/uploads\/2020\/06\/primiparus-cows.jpg 781w\" sizes=\"(max-width: 514px) 100vw, 514px\" \/><\/a><p id=\"caption-attachment-6883\" class=\"wp-caption-text\"><strong>Grafico 3<\/strong>: L&#8217;utilizzo del lievito vivo Biosprint\u00ae consente al gruppo di vacche primipare di mantenere livelli ottimali di assunzione di mangime, con parametri di qualit\u00e0 del latte migliorati.<\/p><\/div>\n<p>\u00c8 quindi necessario utilizzare sia la gestione del bestiame che le tecniche di prevenzione nutrizionale al fine di limitare gli effetti negativi dello stress da calore e per mantenere le prestazioni della mandria ad alti livelli di efficienza.<\/p>\n<p>Per dimostrare che le strategie nutrizionali possono aiutare a sostenere la performance delle vacche durante i mesi estivi, l&#8217;estate scorsa abbiamo testato l&#8217;assunzione di mangime e la qualit\u00e0 del latte in un a<strong>llevamento situato in provincia di Novara con 250 vacche in lattazione<\/strong>.<\/p>\n<p>Durante i mesi di luglio e agosto, quando temperatura e umidit\u00e0 hanno portato il THI ad un valore medio di 76 e ad un valore di picco di 81, si \u00e8 riscontrato che <em>l&#8217;uso costante di Biosprint\u00ae (5 g \/ vacca \/ giorno) ha migliorato le prestazioni del bestiame.<\/em><\/p>\n<p>Il gruppo di vacche primipare che ha ricevuto Biosprint\u00ae MUCL \u2122 39885 per tutto il periodo estivo ha mantenuto un ottimale apporto di mangime e ha mostrato una migliore digeribilit\u00e0 delle fibre, grazie all&#8217;effetto benefico del lievito sulla flora cellulitica, che a sua volta ha migliorato il contenuto di grassi nel latte (Grafico 3).<\/p>\n<p>Il gruppo di vacche pluripare, che non ha ricevuto lievito per tutto il mese di luglio, ha subito invece un notevole calo dell&#8217;assunzione di mangime all&#8217;aumentare delle temperature. Solo aggiungendo al mangime razioni di Biosprint\u00ae \u00e8 stato possibile migliorare l&#8217;assunzione di mangime (Grafico 4), la produzione (+3,4 kg \/ vacca \/ giorno) e il contenuto di grassi del latte (Grafico 5) anche per il gruppo pluriparo.<\/p>\n<\/div><div class=\"fusion-clearfix\"><\/div><\/div><\/div><\/div><\/div><div class=\"fusion-fullwidth fullwidth-box fusion-builder-row-9
